A Great Dish for Casual Company - Set, Simmer and Serve!
Summer seems to bring people over, well, unexpectedly it seems. Make a tomato basil salad, grab some fresh bread for dipping and this recipe goes over very well.
The folks at the Village Food Market in Ogunquit recommend making the cacciatore with bone in chicken - either by cutting up a whole chicken or even better, by using bone in chicken thighs. Just be sure you simmer longer when you use bone in chicken.
CHICKEN CACCIATORE INGREDIENTS:
2lb Chicken - Bone in or boneless
2Tbls Olive oil
6 Cloves Garlic Chopped
1 Medium Onion, sliced uniformly
12oz can Chicken Broth
1 cup Red Wine
3Tbls Tomato Paste
2 Medium Bell Peppers, cored and sliced uniformly
1lb Mushrooms, halved
Salt and pepper
1tsp. dried oregano
1tsp. dried basil
