Warmer weather is on its way - that means it's time for the Country Squire building to re-open for the season. The Country Squire opens starting April 15th - just in time for Patriot's Day!

Taste of Maine . . . At Home This Spring 2011
Feile Restaurant & Pub Classic Shepherd's Pie
The word Feile
means hospitality and generosity. Nearly everything is home made in this kitchen, including the house brined corned beef. Set in the historic Lindsey Tavern, you'll feel transported to an Irish pub right in Wells, Maine. This recipe is perfect to take the chill out of the Spring air - enjoy!
- 5 pounds ground beef
- 1 pound white mushrooms
- 1 Gallon Beef Stock (if not homemade, Feile recommends Kitchen Basics brand)
- ¾ pound unsalted butter
- 2 cups all purpose flour
- 1 oz. fresh thyme
- 1 oz. fresh rosemary
- 1 bag frozen corn (thawed) - or if u can, fresh!
- 1 bag frozen peas (thawed) - or if u can, fresh!
- Salt and pepper to taste
- In a medium sauce pot heat stock with herbs. Herbs may be left whole, making it easier to remove stems afterwards. Simmer for approximately 15 minutes to allow herbs to flavor the stock.
- Melt butter in large sauté pan. Incorporate flour into butter to create a roux.
- Cook roux on stove top stirring frequently until it becomes golden brown.
- Brown ground beef in a large pan over medium high heat or place on a sheet pan and roast at 400 degrees making sure to cook the meat throughout. After beef is cooked, drain the fat, allow to cool and crumble the meat.
- Sauté mushrooms in oil until browned, drain and reserve.
- After stock has simmered remove herbs with a strainer or pick out with tongs.
- Incorporate hot roux into the stock with a whisk until the mixture has thickened and is smooth. Strain if necessary.
- Once roux is at the desired consistency season to your liking and stir in the ground beef and mushrooms making sure to break up any large pieces of the ground beef.
- Pour mixture into a baking dish and spread a layer of peas and corn to cover the ground beef mixture. For an authentic dish, top with your favorite mashed potatoes.
- Bake in an oven until browned and heated through.
